Much Love Monday

Today's MUCH LOVE MONDAY is Bakerella's Lemon Bars (they look very easy)

Here's the recipe (thanks to her website, so please head over there for the best recipes ever! This post really doesn't give her any justice!).

Lemon Bars

Crust:
1 cup butter
1 3/4 cup flour
2/3 cup confectioner’s sugar (plus more for dusting)

Topping:
1 1/2 cup plain sugar
1/4 cup flour
1 tsp baking powder
4 eggs, slightly beaten
1/2 cup lemon juice

Preheat oven to 350 degrees
Grease and flour a 9 X 13 pan

To make crust:

· In a medium bowl, whisk together flour and confectioner’s sugar

· Cut in butter until combined and crumbly.

· Press mixture into bottom of pan.

· Bake for 20 minutes or until golden.

To make topping:

· While crust is baking, prepare topping.

· In a larger bowl, add sugar, flour, and baking powder.

· Then add slightly beaten eggs and lemon juice.

· Mix well and pour on top of warm baked crust.

· Bake for 20-25 minutes.

· When cool, dust with confectioner’s sugar and refrigerate.

· Cut into bars and enjoy them cold!

good afternoon! How are you?

I think that cat's are the most memorable animals on earth. They cuddle you when you feel down, and I think that they definitely have a sixth sense. They can just 'tell' what someone else is feeling, kind of like vibes.

Getting on with things, I have a bit more time with blogging than usual today. I am home sick (not very though) and didn't know what to do to distract myself from being downright in the dumps. So, I thought "hey, why not write an extra long blog entry with some cute e-scrapbooked pictures?" So... as I was sitting here fiddling around my pussy cat Minoes jumped onto my not-so-warm lap. And started purring. And gripping me tightly on the leg with her paws (minus claws... "I don't wanna hurt you, Bella" she would say) so as not to slip off when I move around a bit. She's used to that. She looked ever so cute, so I decided that that would be what my blog entry would be about today.

Good marks and new slippers

bonjour! I think I may be very good at school. I have been improving my marks from mainly C's (last year) to mainly A's and B+'s! woohoo! This has been making my day, and seeing as I have received marks almost every day, I am in such a happy mood! Hopefully I will upgrade again to a straight A student, then in grade 12 I will get such good marks I could ultimately get a great OP score and do the courses and job I would like to do (occupational therapy). My darling mother bought me the most gorgeous pair of new slippers today that are purple, grey and black check with a little grey ribbon-bow and a crystal in the middle! They are beautiful!

Please ignore the icky, hairy, scaly skin visible in the above picture... ugh! :) anyway... It's nearing 9 o'clock pm and is therefore time to go to bed (my bedtime is around 8:30pm). :) So... I will see you in the future sometime soon or hopefully on this blog again!

school

School. School is:
boring, fun, exiting, stressful, funny, lovely, beautiful, aweful, saddening, happening, weird...

and much more. But guess what? Most of the time school is OK. I can COPE. But at other times (quite a bit) it is stressful. Actually all the time. And we ALWAYS get too much homework. I won't say what grade I', in for safety reasons, but I can say that the homework given in Australia is far too much. We need more 'play time' (e.g. for me that would be sewing, crafting and stuff)

And I have hardly done any more of the quilt since I started. :(
I really should.

So this is a page of the many pages of tests I have to do to get ready for a thing called NAPLAN. ew
Have any luck doing the questions? and, seriously, we have 2 whole tests of these to do, with maybe about 28 questions on each, 40 minutes aloud on EACH test? :(
